Rhubarb Spritz

A celebration - refreshing - sweet / tart

Build into a tall glass with ice:
25ml Kissing Gate Gin
35ml Rhubarb syrup (Bubble 250g diced rhubarb, zest of 1 orange, 200g caster sugar & 300ml water for 10 minutes. Cool & strain)
Sparkling wine or prosecco to top

Garnish with:
A ribbon of peeled rhubarb, threaded onto a cocktail skewer.
